Plant Based Antojitos

Once upon a time we were totally omnivorous. One of our favourite restaurants used to have this appetizer they called 'antojitos'

I nailed the recipe the first try, because it's actually super simple. At the restaurant, and when I first started making them, we always used cow products.

Now that we have switched to a plant based diet, I found using Daiya cheese to be quite delicious! But whatever you choose will work great :)

I picked up some wraps on my trip to the organic market today, and I already had some shredded Daiya cheese as well as some cream cheese in my fridge.

I grabbed some organic local peppers from the farmers market as well, which are SO tasty! Plus, I already had some spinach in the fridge so I added that this time, which is totally optional, you can add other veggies that you might enjoy, or just the peppers. As I recall the original recipe had jalapeño peppers chopped up really small and mixed in with the bell peppers, but I'm not a fan of spicy food so I omit them.

Anyway, I just spread my vegan cream cheese on my wrap:

Then sprinkled some diced bell peppers:

I added some shredded Daiya Cheese:

And topped with spinach!

Then I rolled them nice and tight put a few slashes through them for easy cutting once they're cooked, and into the oven they go!

I let them cook for about 10-15 minutes until the cheese is all melty :)

They're SO GOOD!!!
