Mac n' Tofu

In trying to come up with a name for this delicious creation, I foolishly asked my husband. His suggestion?
'A Tasty Macaroni Dish I Came Up With This Morning',
or 'A.T.M.D.I.C.U.W.T.M' for short. I should have known better. I was half tempted to use it though, just to be silly, but in the end I figured a very simple self explanatory name would do better.

Long before I was vegetarian or vegan I used to make a dish with chicken breast just like this. I adapted it a bit to use tofu instead and it turned out fantastic!
It goes great on rice as well as quinoa, macaroni or fusilli or any other pasta of choice. I do recommend using SoyGanic Smoked Tofu in the Garlic and Black Pepper flavour, it's amazing! This dish wouldn't be half so good without it. I highly recommend it to anyone not fond of tofu, I never cared for the stuff until I tried this one.

So, without further ado, here's this SUPER easy recipe, it's admittedly one of my much less healthy meal ideas, but it's pretty fast and filling! You can make it gluten free and it's naturally vegan too!
Ingredients:
I package of SoyGanic Garlic and Black Pepper Tofu
1 (BPA free) Can of organic tomatoes
1 Green Bell Pepper, diced
1 Red Onion, diced
1 package of organic Macaroni (or grain of choice*)
Braggs, or soy seasoning of choice, about 2-3 tablespoons
Freshly Ground Black Pepper
Avocado Oil for Sautéing
Directions:
~Dice everything, add tofu to hot non-stick pan with a little oil, fry for several minutes, browning it up nicely
~Meanwhile, Boil a big pot for the Macaroni, cook accordingly
~Next add a little Braggs to the tofu and continue frying.
~In a Large skillet, add in diced veggies* and sauté for a little bit then add the tomatoes.
~Once it's cooked, drain macaroni and add everything together in the large skillet and mix well.
*For your 'grain of choice' I was referring to Rice, Quinoa, Barley etc, or any kind of pasta. Please note that many of these will absorb the liquid like crazy so it may be better to add mixture on top when serving instead of a full mix. (The macaroni absorbs just enough to really rock the flavours!)
* For veggies you can use just about anything, peas, zucchini, mushrooms, beans, totally your choice!
I have garlic growing in my garden and REALLY regret not adding in some snips of the lovely greens to this dish! Next time for sure!
