Sprouted Lentil Burgers

My husband admittedly is not the best cook. He has great intentions, is always willing, but it often turns into a disaster with the smoke alarm screaming at him, then the kids screaming because it's 7pm and he just burned dinner. It's been decided that I will do the cooking and he can stick to the things he IS good at, like SPROUTING! He recently sprouted a bunch of lentils, we all had our share but there were still quite a few left, thus my inspiration for these delicious burgers!

Ever tried searching for sprout recipes? Not sure what the magic word should be in there to get anything other than Brussel Sprouts but I haven't found it yet! So, I just made my own. I started with some steel cut oats, threw them in my food

processor and whizzed them for a bit. Once they were partially broken up I added the rest of the mix, I found it took a while to get a chunky mash mixture, maybe 3-4 minutes.

These burgers are so tasty! I added some ketchup to mine but they'd go great with anything! I even

just ate them plain without the bun, they're awesome. You can easily form and freeze them for an extremely quick meal, too. I should also mention the powerhouse of nutrition these things are. With the veggies, the oats, then the superfood that is sprouted lentils, these are almost a complete meal in themselves! If you've never sprouted your legumes or seeds before give it a try!

Recipe

Ingredients:

1.5 Cups of Sprouted Lentils

3/4-1 Cup Steel Cut Oats

1/4 Cup Frozen Green Peas

1/4 Cup Frozen Corn

1 Packed Cup Fresh Spinach

2 Med-Lg Grated Carrots

1 Tablespoon of Paprika

1 Tablespoon of Onion Powder

1 Tablespoon of Garlic Powder

1 Tablespoon Parsley

1 Teaspoon Oregano

1 Teaspoon Thyme

1 Tablespoon Olive Oil (+ more for frying)

1/4Cup Veggie Stock

A Squirt of Braggs (approx. 1.5 Tablespoons)

Instructions:

~ Whiz oats in food processor until broken up

~ Add all other ingredients and blend until a chunky mix is formed

~ Empty into a bowl and use a tablespoon to add a dollop into a nonstick pan with hot oil.

~ Using a spoon and spatula, shape into a disk and continue frying until browned

~ Once both sides are browned, lay them onto a paper towel to soak up excess oil
