Skillet Dinner

Ever had a breakfast skillet at a restaurant? Usually a mix of potatoes, onions, peppers etc. They're so easy to make at home and packed with nutrition, no need to limit them to breakfast!

I usually start with sautéed onion, sometimes garlic too, then throw in some chopped bell peppers, any colour. Meanwhile I boil a big pot of water and add chop potatoes (or 'tatos' as my son likes to call them) then boil them until they're soft. For protein you can add beans; chickpeas, black beans, edamame, or try tofu, some vegan sausages, it all works great! You can also add eggs, cheese or pretty much any other animal parts, if you swing that way. I usually chop spinach, half cherry tomatoes and snip some green onions to add at the very end. Salt and pepper, mix well and serve. Other vegetable options I've found go well in this dish are; corn, mushrooms, asparagus, zucchini, green beans, fresh herbs, squash, it's totally up to you
