Fudgy Date Brownie Bars

Ever have one of those late night chocolate cravings? I do. Pretty much every night. So... Instead of baking up one of my famous (in my house anyway) single vegan cookies, I have discovered these scrumptious chocolatey delights that are at least a little more on the healthy side and less on the fatty side!

They're a no-bake, vegan treat that takes very little effort to make. They're very rich, so much so that I'm usually satisfied after just ONE!
Ingredients:
1 & 1/4 Cups Cacao Powder
1 Tightly Packed Cup of Dates
1/2 Teaspoon Salt
3/4 Cup Natural Peanut Butter
1/2 Cup Vegan Chocolate Chips
1/2 Cup Nuts of Your Choice (I use cashews and/or almonds)
• Process nuts and chocolate chips into a coarse meal, put in a bowl, add salt and cacao powder, combine
• Process dates until smooth
• Add peanut butter, process to mix
• Add cacao/nut mixture and process until well blended
• Line an 8x8 or 9x9 baking dish with parchment paper, add in mixture and spread out evenly
• To pack it as tight as possible, place plastic wrap over the entire surface and press down as firmly as possible, making sure to keep it even and the sides from raising up
• Place in fridge for at least an hour, then chop into squares or rectangles and enjoy!
I keep these in the fridge, they would freeze well if you want to keep them longer. For more of an 'icy' texture, you could add a few tablespoons of coconut oil.
