My Mac ~n~ Cheez, that's right, My Mac ~n~ Cheez, so you KNOW it's good! Otherwise, I wouldnt take credit for it! It's a similar recipe to many other vegan dishes out there. I incorporate everything to make a Super-dish. One dish to rule them all.

The crust is what sets it over the edge of deliciousness. 'Buttery' (but not really, no real butter!) crumbly goodness in every bite! I love it best reheated the next day with even MORE butter. Evil I know. I like using organic Earth Balance, good flavour and it works well with most recipes.
I came up with this recipe on Thanksgiving,

after wracking my brain to come up with a vegan dish that could kick my mother in law's turkey's ass. I think I won! Of course, no one is keeping tabs on whose dish is better, or which side is winning on the endless battle of omnivore vs vegan, nope, no one. Certainly not me!! Ha!
Ingredients:
2 Medium Carrots
2 Medium/Small Potatoes
Half a Head of Cauliflower*
Half - 3/4 of a cup of Cashews, Soaked for at least 4 hours (I've even pushed it to as little as 2.5hrs!)
2/3 Cup Nutritional Yeast
1 Table Spoon Onion Powder
1 Table Spoon Garlic Powder
1 Table Spoon Paprika
1/2 Table Spoon Salt
1/2 Tea Spoon Mustard Powder
1 Tea Spoon Smoked Paprika
About 1 Cup Almond Milk or Veg Stock
1 550g Package of Macaroni
1 Table Spoon Vegan Butter
For Topping:
1/2 Tea Spoon of Salt
3 Table Spoons of Nutritional Yeast
3 slices of Toast
3 Table Spoons of Vegan Butter
1/2 Tea Spoon Garlic Powder
1/2 Tea Spoon Onion Powder
*Vegetables are interchangeable, I've used zucchini, corn, butternut squash, the cauliflower and carrots are best but even they can be switched if you're in a pinch!
To Prepare:
Peel and Prepare Veggies.
Steam Veg until Soft.
Cook Macaroni, Rinse With Cold Water.
Preheat Oven to 375.
Drain and rinse Cashews, Cover with Almond Milk and Blend until Smooth.
Mix veg, Two Tablespoons of Vegan Butter, Spices, Remaining Vegetable Stock or Almond Milk, Nutritional Yeast and Cashew Sauce then Blend until Very Smooth.*
Mix with Macaroni in a 9x13 glass baking dish.
*I have a Ninja, I usually mix it in the processor then use the single shot to get it extra smooth :]
For Topping:
Process Toast so it's Crumbly
Melt Butter, add to processed toast along with nutritional yeast and spices then pulse until mixed.
Spread out evenly on top of Mac ~n~ Cheez
