Balls. Veggie Balls.

Anyone try the new Veggie Balls from IKEA? I have, they're awesome! We are currently reverting back to veganism, after spending some time as omnivores. Happens to me every pregnancy, I just ending up craving meat and animal products the whole time. I strongly believe cravings are too important to be ignored, so unfortunately for the animal population I did not ignore them.
Here's my version of IKEA's new Veggie Balls. Not the same (Mine are better) but very close! Full of veggies and fibre, plus some yummy spices!
I'm terrible at measuring anything, while I can follow other's recipes, I always just dump and pour when it comes to my own. I first put three carrots, chopped, into a frying pan with some veggie broth. I chopped up half an onion and threw that in, along with a handful or two of frozen corn.

Then, my little one started crying and needed me so I walked away and the broth dried up and I burned it a little. I quickly poured some more veggie broth on it, and took it off the burner to get back to baby. I was so frustrated from a long ass day I told my husband (who was trying to get my oldest down for a nap) that supper was cancelled.

Once the storm was over, I returned and added some olive oil, orange and green pepper, cauliflower, peas

and spices including; sprinkles of salt and sugar (or honey), garlic, onion, chilli and mustard powders, cumin, thyme, paprika and a bit of smoked paprika too.

I whizzed up some oats and flax seeds into fine powder and set it aside. I let the veg mixture cool a bit and then dumped it into the the food processor and pulsed a bit, I didn't want to break up the pieces too much. I mixed the veg and the oat flour, balled them up and put them on a

baking sheet with sunflower oil. I popped them in the oven at 425 and turned them over half way, let them cook about 20mins or so. They turned out AMAZING! I served them with some organic crushed tomatoes and som quinoa-corn organic gluten free pasta.

So there you have it, sort of, as well as I can tell it. These are Organic, Vegan and Gluten Free and soooo tasty! Let your senses run wild and add or remove what you want!
