Soupe Du Jour

I love soup. I love almost every kind of soup there is. Vegetable soup is by far my favourite. It's also such an easy vegan dish. With so different vegetable (or even fruit) options the possibilities are endless.

I made this soup on a very snowy day in May. Yes. Very snowy. May. We had beautiful weather for at least a month, then BAM, a foot or more of snow. I had just put some plants outside to acclimate and ended up having to take them right back in again.

The kids had their first colds of the year as well that they cant seem to kick. Either that or they have had three different cold viruses in 4 weeks. Since they're

going to a new playgroup with no 'don't come if you're sick' policy I wouldn't doubt it!

I use 'Imagine' brand broth quite a bit around here. I've tried other organic brands, but they're just not as good, Imagine has the best flavour with no added yeast extract.

I did something crazy with this soup that I've never done before. I added, wait for it.... KETCHUP! Organic of course, just a little squirt, it really gave it the zing it needed to push it over the edge of good into awesomeness!

A word on Mount Scio savoury, it's amazing! Not organic sadly, one of the few things I keep in my house and use that isn't I was raised on the stuff, it has a very distinct flavour and reminds me of home.

I don't go by recipes often, it's too much fun to play around with flavours, learning as I go, thankfully I generally have a good sense of what spices and herbs go together. I'll do my best to tell you how to recreate this delicious mess:

~Chop garlic, I used 5 med-lg cloves but you can -/+

depending on your taste. (I couldn't even taste it in mine, but I eat garlic quite often.) Then set it aside.

~Chop up an onion, throw it in your chosen pot with a good splash of olive oil and put your heat on low/med to get it sizzling lightly.

~Throw in some spices, I added pink salt, dried parsley, garlic powder and Mount Scio savoury, really any spices you like, fresh or dried.

~Chop up 3-5 celery stalks.

~Add in garlic and celery once your onions have softened, about 5 minutes.

~Add your veggie stock, or even just water if you're all out. Bring to a simmer.

~Chop up 4-5 carrots into bite sized pieces, add to the mix after 5-10 minutes.

~Chop 3 small or 2 large potatoes into pieces the same size as the carrots. Add to the mix about 10 minutes after the carrots.

~Let simmer 10 minutes then add a handful each of corn and peas and a squirt or two of ketchup, stir and let simmer another 5 minutes or so, taste it to make sure your veggies are cooked, add salt or water depending on how you like it.

This recipe is quite basic and can easily be modified depending on what you have in your cupboards and fridge. Just keep in mind the cook time of your ingredients.
