The Kombucha Kraze

For quite a while I found the thought of making my own ferments, including Kombucha, an extremely daunting task. It seems like the kind of thing that if you make a mistake you could end up poisoning yourself. Realistically thought it's much more simple than it seems. My husband was my push to finally start brewing. He has battled a soda addition for years and recently broke the habit. With no soda however he was looking to replace that treat with something to help wih the cravings. Eureka! Kombucha to the rescue!

He had purchased a store bought Kombucha one day that contained a 'baby' SCOBY. It looked like a little nauseating ball of snot in his drink. He then (without any care or concern) threw the poor baby in a mason jar with his leftover cup of herbal tea, cinnamon of all flavours, and miraculously the little guy thrived! He formed a super healthy scoby and has already helped us create three batches of kombucha.

We have had a blast trying out as many flavours as we can think of, from disgusting cucumber (bleh! like drinking a pickle!) to a yummy strawberry/lime. We even tried out fennel seeds to get a deep black licorice flavour, it worked out great! There is plenty to learn that's for sure, with no shortage of flavour ideas. If you have been wanting to start brewing but have felt nervous just throw caution to the wind and go for it!
